Mango, Avocado & shrimps salad

In this article I am going to talk about one of my favourite salads–this is the ideal light meal to pop out during December as it is packed with natural vitamins and nutrients that will keep you healthy during the winter time. As it’s filling without a lot of starchy carbs, it’s also a nice dish to help you drop the holiday pounds.

You can cook this in a very short amount of time, the hardest part is during the preparation time when you have to chop everything up but this recipe is going to be absolutely wicked and tasty!

 List of Ingredients

1 grapefruit

200 grams of avocado

350 grams of mango

400 grams of fresh shrimp (steamed or grilled)

1 teaspoon of ginger

1 teaspoon of honey

220 ml of orange juice

One red onion (sliced up)

Half a cup of grape tomatoes

100 g of chopped cilantro

100 ml of olive oil

1 chopped up chilli pepper

Instructions

Start by cutting off the bottom of the grapefruit, cut it up into small segments so that you can preserve the natural juice.

After you are done with the grapefruit it is time to peel the mango, peel the mango just like you would peel a potato, after you are done with the peeling just wash it at chop it into segments.

It is now time to make the dressing so start by adding that olive oil into a bowl and mix it with the salt and pepper. It is important to use fresh ground black pepper if you can because it will improve the flavour.

After you add the salt and pepper just add the ginger then the honey and finally the orange juice. After you add all the ingredients give it a nice whisk so that everything mixes really well and the final step to this mix is to add up the chopped up chili pepper as well as that chopped up cilantro.

After you are done with the mixing place the bowl in a fridge for a couple of hours and get ready to prepare the salad.

Start by using a big bowl for the salad and add those tomatoes, the mango, the sliced up red onion, the grapefruit, the shrimp and before adding the avocado mix the ingredients really well.

It is important to mix the ingredients up really well before you add the avocado because the avocado may bruise up so mash it up as you add the dressing and avocado.

This salad is really good to serve on special occasions, imagine serving it on a Caribbean holiday or on those cold winter days when you just want to taste a bit of those old summer memories spent in the Caribbean.

The colours and the vibrancy are absolutely exceptional and the smell is just wicked! If you serve this up to your guests they will be really impressed about how nice this salad is, just serve it as soon as you put that dressing up or else it is going to fall apart.
